fast, easy and good! My daughter finds great recipes and makes them better! You can have all these ingredients around, you just have to pick up your fresh lime and cilantro! Kayla says adding fresh green onions, cheese and/or avocado makes the soup even better!

Ingredients

  • 2 tablespoons canola oil
  • 1 medium onion
  • 1 medium celery ribs
  • 2 cloves garlic
  • 1 tablespoon red chili powder
  • 1 teaspoon ground cumin
  • 6 cups chicken broth
  • 1/4 cup chopped green chilis, canned
  • 15 1/2 ounces white hominy, drained
  • 4 - canned, whole tomatoes, roughly chopped
  • 1 teaspoon dried oregano
  • 1 cup shredded chicken breast
  • 1/4 cup cilantro, fresh, chopped
  • 1 - juice of 1 lime
  • - salt and pepper

How To Make kayla's quick posole

  • Step 1
    Heat the oil in med sauce pan over med heat. Add the onions, celery, garlic, chili powder and cumin and cook until the onion softens, 5 minutes. Add the chicken broth and bring to a boil, reduce the heat slightly and simmer uncovered 10 minutes. Add the green chiles, hominy, tomatoes and oregano and cook for another 5 minutes.
  • Step 2
    Pull the pan from the heat and stir in chicken, cilantro and lime juice. Season to taste with Salt & pepper. Serve hot.
