Ingredients
- 1 - small chicken 3-4 lbs
- 6 cups water
- 6 cups chicken bouillon
- 3 - celery stalks w/ leaves
- 2 - large carrots
- 1 package brussel sprouts (secret ingredient)
- 1-1/2 cup rice
How To Make jeanne's chicken soup
-
Step 1Clean the fat from between the skin and flesh, and leave chicken whole. Add with all other ingredients to pot except rice and sprouts, bring to low boil, and simmer without stirring for about 1-1/2 hours. Remove chicken and cool enough to pull apart. This is a good time to skim any fat. I use all the meat EXCEPT the breast, which I save for sandwiches. Put the chicken meat back into pot, bring to gentle boil, and add rice and brussels sprouts, simmer for 20 minutes til rice is cooked
-
Step 2You can remove the sprouts, and the kids won't know, if they do not care for them. Otherwise you can slice them into pieces in the soup. A real difference from adding other greens, the flavor is incredible!
-
Step 3You can also substitute boullion cubes in the water 1 cube for every 2 cups
