Sometimes I have a little bit of leftover vegetables in my freezer and decide to make soup out of them. I throw some broth and veggies together with some macaroni and any leftover meat. It makes a tasty soup.

Ingredients For icebox soup

1 mdonion, chopped

2 clovegarlic, minced
-
4 cchicken or vegetable broth

1 canwhite beans, or canned beans of your choice

3 cassorted frozen vegetables of your choice

1 canfire roasted tomatoes

1 ccooked chicken breast, cubed (optional)

1 cmacaroni, cooked
-
1 tspground rosemary
-
1 tspground sage
-
2 tspolive oil
-
2 Tbspgrated parmesan cheese, for garnish
How To Make icebox soup

1Heat olive oil in soup pot and saute onion and garlic until softened.

2Add the rest of ingredients except macaroni and Parmesan cheese. Bring to simmer and cook until vegetables are tender. About 15 min.

3Add macaroni and cook until heated through. About another 5 min.

4Serve sprinkled with Parmesan cheese.
