Sometimes I have a little bit of leftover vegetables in my freezer and decide to make soup out of them. I throw some broth and veggies together with some macaroni and any leftover meat. It makes a tasty soup.

Stove Top


  • 1 medium
    onion, chopped
  • 2 clove
    garlic, minced
  • 4 c
    chicken or vegetable broth
  • 1 can(s)
    white beans, or canned beans of your choice
  • 3 c
    assorted frozen vegetables of your choice
  • 1 can(s)
    fire roasted tomatoes
  • 1 c
    cooked chicken breast, cubed (optional)
  • 1 c
    macaroni, cooked
  • 1 tsp
    ground rosemary
  • 1 tsp
    ground sage
  • 2 tsp
    olive oil
  • 2 Tbsp
    grated parmesan cheese, for garnish

How to Make Icebox Soup


  1. Heat olive oil in soup pot and saute onion and garlic until softened.
  2. Add the rest of ingredients except macaroni and Parmesan cheese. Bring to simmer and cook until vegetables are tender. About 15 min.
  3. Add macaroni and cook until heated through. About another 5 min.
  4. Serve sprinkled with Parmesan cheese.
