Sometimes I have a little bit of leftover vegetables in my freezer and decide to make soup out of them. I throw some broth and veggies together with some macaroni and any leftover meat. It makes a tasty soup.

Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can white beans, or canned beans of your choice
  • 3 cups assorted frozen vegetables of your choice
  • 1 can fire roasted tomatoes
  • 1 cup cooked chicken breast, cubed (optional)
  • 1 cup macaroni, cooked
  • 1 teaspoon ground rosemary
  • 1 teaspoon ground sage
  • 2 teaspoons olive oil
  • 2 tablespoons grated parmesan cheese, for garnish

How To Make icebox soup

  • Step 1
    Heat olive oil in soup pot and saute onion and garlic until softened.
  • Step 2
    Add the rest of ingredients except macaroni and Parmesan cheese. Bring to simmer and cook until vegetables are tender. About 15 min.
  • Step 3
    Add macaroni and cook until heated through. About another 5 min.
  • Step 4
    Serve sprinkled with Parmesan cheese.
