Sometimes I have a little bit of leftover vegetables in my freezer and decide to make soup out of them. I throw some broth and veggies together with some macaroni and any leftover meat. It makes a tasty soup.

Ingredients
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 can white beans, or canned beans of your choice
- 3 cups assorted frozen vegetables of your choice
- 1 can fire roasted tomatoes
- 1 cup cooked chicken breast, cubed (optional)
- 1 cup macaroni, cooked
- 1 teaspoon ground rosemary
- 1 teaspoon ground sage
- 2 teaspoons olive oil
- 2 tablespoons grated parmesan cheese, for garnish
How To Make icebox soup

Step 1Heat olive oil in soup pot and saute onion and garlic until softened.

Step 2Add the rest of ingredients except macaroni and Parmesan cheese. Bring to simmer and cook until vegetables are tender. About 15 min.

Step 3Add macaroni and cook until heated through. About another 5 min.

Step 4Serve sprinkled with Parmesan cheese.
