This is a very hearty & healthy chicken chili (or soup). It can be made in the crockpot by layering the ingredients over the chicken (except sour cream & cheese) and simmering on low for 8-10 hours until chicken is no longer pink.

Ingredients For hearty white chicken chili

1 lbboneless skinless chicken breasts

1 cangreat northern beans
-
1 cansmall white beans (frijoles)

1 box32 oz. chicken broth (lower sodium)

1 canhealthy request cream of chicken soup

1 can4 oz. can chopped green chile peppers

1 pkghot & spicy taco seasoning

1/2 c2% shredded pepper jack cheese, or to taste

1/2 cfat free sour cream
How To Make hearty white chicken chili

1Cook chicken breasts in 1 quart water. Remove from pay and chop in cubes or shread the chicken (as desired). Place chicken back into cook pot.

2Drain and add beans, white corn, chicken soup, green chile peppers and taco seasoning. Mix into chicken and add box of chicken broth. Simmer on low for about 20 minutes, until flavors are blended.

3Just before serving, add the sour cream and pepper jack cheese until melted (2-3 minutes). Serve as a soup with crackers or over rice.
