hearty white chicken chili

This is a very hearty & healthy chicken chili (or soup). It can be made in the crockpot by layering the ingredients over the chicken (except sour cream & cheese) and simmering on low for 8-10 hours until chicken is no longer pink.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 can great northern beans
  • 1 can small white beans (frijoles)
  • 1 box 32 oz. chicken broth (lower sodium)
  • 1 can healthy request cream of chicken soup
  • 1 can 4 oz. can chopped green chile peppers
  • 1 package hot & spicy taco seasoning
  • 1/2 cup 2% shredded pepper jack cheese, or to taste
  • 1/2 cup fat free sour cream

How To Make hearty white chicken chili

  • Step 1
    Cook chicken breasts in 1 quart water. Remove from pay and chop in cubes or shread the chicken (as desired). Place chicken back into cook pot.
  • Step 2
    Drain and add beans, white corn, chicken soup, green chile peppers and taco seasoning. Mix into chicken and add box of chicken broth. Simmer on low for about 20 minutes, until flavors are blended.
  • Step 3
    Just before serving, add the sour cream and pepper jack cheese until melted (2-3 minutes). Serve as a soup with crackers or over rice.
