Ingredients
- 1 1/3 cups multicoloured rotini pasta
- 1 teaspoon olive oil, extra virgin
- 3/4 cup red onion, cut in 1/2" chunks
- 2 cloves garlic, quartered
- 1 teaspoon chopped fresh oregano, or 1/4 tsp. dried
- 4 cups chicken broth
- 1 can diced tomatoes, drained (14.5 oz)
- 1/2 cup carrots, chopped
- 8 ounces grilled chicken breast, chopped
- 1/2 cup chopped fresh basil

Step 1Prepare pasta per package directions. Meanwhile, in medium saucepan over medium heat, add oil then onion, garlic, and oregano. Cook, stirring often, until onions and garlic are tender, about 5 minutes.

Step 2Add broth and bring mixture to a boil.

Step 3Add tomatoes and carrots. Lower heat and simmer until vegetables are tender, about 15 minutes.

Step 4Stir in chicken and pasta. Simmer to heat chicken through, about 2 minutes. Stir in basil. Season with salt and pepper to taste. Serve hot or refrigerate in plastic container and reheat before serving.
