Ingredients
- 1 package bear creek tortilla soup mix
- 1 cup chopped onion
- 1 pound cooked chopped or shredded chicken
- 1 can black or pinto beans
- 1 can chopped tomato mexcian style or chili style
- 1 cup thawed or canned corn
- 1/2 cup fat free sour cream
- 1/2 cup shredded low fat cheddar jack cheese
- 1/2 cup crushed tortilla chips or nacho chips
How To Make easy chicken tortilla soup

Step 1Prepare soup mix according to package. Saute' the chopped onion in 1 T of butter or olive oil. I like purple onion but you can use yellow or green onions as well.

Step 2Add the canned tomatoes and the corn to the onion mix and heat through.

Step 3Add the tomato/corn mix, the canned beans (rinse first), and the cooked chicken to the soup base. Cook until all ingredients are heated through. Pour into bowls and top with the sour cream, cheese, and crushed chips.
