easy chicken gumbo

Another low glycemic recipe for those of us with diabetes. The other family members will like it too. If you can't find the gumbo vegetables mix just use frozen mixed vegetables plus a package of frozed sliced okra.

Ingredients
- 2 slices bacon, finely chopped
- 1 pound frozen gombo mix vegetables
- 2 quarts chicken broth
- 1 pound boneless, skinless chicken breasts, thighs, or both
- 1 can (14-1/2 ounces) diced tomatoes
- 2 teaspoons hot-pepper sauce, or to taste
- 1 clove garlic, crushed
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon crushed red pepper, or to taste
How To Make easy chicken gumbo

Step 1Put your soup kettle or a good, big saucepane over medium heat. Put the bacon in the kettle and start it browning.

Step 2When the bacon is just starting to get crisp, add the frozen gumbo mix- no need to thaw it first--and the chicken broth.

Step 3Cut the chicken into 1/2" cubes and stir it into the soup (don't just dump it in, or it will sink to the botton of the pot and cook together into a big lump). Stir in the tomatoes, hot-pepper sauce, garlic, thyme, black pepper, and red pepper, bring the whole thing to a simmer, and let it cook until the veggies are tender.
