curried chicken and cider soup
I made this soup the other night my daughter loved it and asked me to make her a batch sooo next mornn I did just that! Had all the ingredients n it was so EASY.

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chpd.
- 1 tablespoon grated fresh ginger
- - salt and pepper
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 4 cups chicken broth
- 1 cup apple cider
- 2 medium to large sweet potatoes, peeled n cut into 1"pieces
- 1/2 large head of cauliflower coarsley chpd.
- 1/2 - rotisserie chicken, shredded or 2 boneless chicken breasts roasted n shredded
- 1/8 cup chpd. fresh parsley
- 1 pinch cayenne pepper (optional)
How To Make curried chicken and cider soup

Step 1In a large saucepan heat olive oil add onion, ginger and 1 tsp. salt. Cook stirring occasionally until softened (5 min).

Step 2Add curry powder and cumin and cook stirring for 3 minutes. Stir in apple cider scrapping the bottom of the pan.

Step 3Add 4 cups of chicken broth and sweet potato and bring to a boil...then add cauliflower n lower heat n simmer until veggies are tender about 10 minutes.

Step 4Using an emersion blender (stick) n puree soup. Add parsley. Salt n pepper to taste n cayenne if using stir in chicken to warm through. ENJOY!
