creamy broccoli & chicken soup

This is a nice healthy soup that is very tasty! It sometimes takes a little more flour paste to get it to the desired thickness, and sometimes we use ready made frozen grilled or roasted chicken, but other than that, I follow this recipe exactly! Garnish this dish with a bit of cheddar cheese & oyster crackers and enjoy!

Ingredients

  • 1 cup water
  • 2-3 bunches broccoli
  • 1/2 cup chopped celery
  • 1/4 cup finely chopped onion
  • 1 tablespoon butter
  • 1 tablespoon all purpose flour
  • 2 cups chicken broth
  • 1 cup half & half
  • 2 cups diced, cooked chicken

How To Make creamy broccoli & chicken soup

  • Step 1
    Heat water to boiling in a 3 qt. sauce pan. Stir in broccoli, celery, and onion. Cover and heat to boiling; reduce heat, simmer about 15 min. until the vegetables are tender; do not drain.
  • Step 2
    Place in blender. Cover and blend about 45 seconds. Stopping frequently to scrape sides.
  • Step 3
    Heat butter in 3 qt. saucepan over low heat until meltled. Stir in flour. Cook stirring constantly. Stir in broth, heat to boiling, stirring constantly boil and stir 1 min. Stir in broccoli mixture. Heat just to boling. Stir in chicken and milk. Heat just until hot.
  • Step 4
    Thicken with extra flour paste if necessary. Garnish with shredded cheddar cheese and oyster crackers.
