Creamy Broccoli & Chicken Soup

This is a nice healthy soup that is very tasty! It sometimes takes a little more flour paste to get it to the desired thickness, and sometimes we use ready made frozen grilled or roasted chicken, but other than that, I follow this recipe exactly! Garnish this dish with a bit of cheddar cheese & oyster crackers and enjoy!

fresh lemon juice
2-3 c
coarsley chopped broccoli
1/2 c
chopped celery
1/4 c
finely chopped onion
1 Tbsp
1 Tbsp
all purpose flour
2 c
chicken broth
1 c
skim milk
2 c
diced, cooked chicken

How to Make Creamy Broccoli & Chicken Soup


  • 1Heat water and lemon juice to boiling in a 3 qt. sauce pan. Stir in broccoli, celery, and onion. Cover and heat to boiling; reduce heat, simmer about 15 min. until the vegetables are tender; do not drain.
  • 2Place in blender. Cover and blend about 45 seconds. Stopping frequently to scrape sides.
  • 3Heat butter in 3 qt. saucepan over low heat until meltled. Stir in flour. Cook stirring constantly. Stir in broth, heat to boiling, stirring constantly boil and stir 1 min. Stir in broccoli mixture. Heat just to boling. Stir in chicken and milk. Heat just until hot.
  • 4Thicken with extra flour paste if necessary. Garnish with shredded cheddar cheese and oyster crackers.
