Creamy Broccoli & Chicken Soup
1 Tbspfresh lemon juice
2-3 ccoarsley chopped broccoli
1/2 cchopped celery
1/4 cfinely chopped onion
1 Tbspall purpose flour
2 cchicken broth
1 cskim milk
2 cdiced, cooked chicken
How to Make Creamy Broccoli & Chicken Soup
- Heat water and lemon juice to boiling in a 3 qt. sauce pan. Stir in broccoli, celery, and onion. Cover and heat to boiling; reduce heat, simmer about 15 min. until the vegetables are tender; do not drain.
- Place in blender. Cover and blend about 45 seconds. Stopping frequently to scrape sides.
- Heat butter in 3 qt. saucepan over low heat until meltled. Stir in flour. Cook stirring constantly. Stir in broth, heat to boiling, stirring constantly boil and stir 1 min. Stir in broccoli mixture. Heat just to boling. Stir in chicken and milk. Heat just until hot.
- Thicken with extra flour paste if necessary. Garnish with shredded cheddar cheese and oyster crackers.
