Ingredients
- 1 cup long grain white rice
- 2 boxes (32 oz. each) chicken stock or 2 quarts homemade
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon nutmeg
- salt & pepper to taste
- 1 cup heavy whipping cream
- 2 cups cooked, diced chicken
How To Make cream of chicken & rice soup

Step 1Rinse the rice, then drain and add it to boiling water. Boil for 5 minutes then drain.

Step 2Boil the chicken stock and add the rice. Lower the heat to simmering and simmer, covered for 25 minutes.

Step 3Season with salt, pepper, cayenne, and nutmeg, then add the cream and bring to a simmer for 5 minutes longer.

Step 4Stir in the cooked, diced chicken and serve immediately.

Step 5NOTE: It will begin to thicken within a minute of leaving the heat.
