Classic Scottish Soup. Sounds funny, but really good! I always use more juniper berries just because we like them.

Ingredients For cock-a-leekie with tender prunes

2 Tbspolive oil, extra virgin

4chicken breast halves, skinless and boneless, cubed

3 boxchicken stock

1 cpearl barley, uncooked

2 tspthyme, dried

2 clovegarlic, minced

6carrot, sliced

8juniper berries, crushed

3 lgleeks

1 cdried plums (purnes) ,chopped
How To Make cock-a-leekie with tender prunes

1In soup pot, heat olive oil, add chicken and brown. Add salt, pepper,garlic. Stir in broth, barley, thyme, juniper berries,and carrots. bring to a boil. Reduce heat and cover. Simmer about 25 min~ until barley is tender.

2Add leeks and prunes. Cover and simmer for another 15 min, until leeks are tender. Serve and enjoy.
