Ingredients
- 2 tablespoons olive oil, extra virgin
- 4 - chicken breast halves, skinless and boneless, cubed
- 3 boxes chicken stock
- 1 cup pearl barley, uncooked
- 2 teaspoons thyme, dried
- 2 cloves garlic, minced
- 6 - carrot, sliced
- 8 - juniper berries, crushed
- 3 large leeks
- 1 cup dried plums (purnes) ,chopped
How To Make cock-a-leekie with tender prunes

Step 1In soup pot, heat olive oil, add chicken and brown. Add salt, pepper,garlic. Stir in broth, barley, thyme, juniper berries,and carrots. bring to a boil. Reduce heat and cover. Simmer about 25 min~ until barley is tender.

Step 2Add leeks and prunes. Cover and simmer for another 15 min, until leeks are tender. Serve and enjoy.
