I got this recipes on comida cuban.com. My boyfriend father was puerto rican and he was raised with is recipes, but i could find it so a borrow it from the site. I taste is very dead on..

Ingredients

  • 1 pound 3 chicken
  • 2/3 cup oil
  • 1/4 cup onions
  • 1 - sprig of parsley
  • 1 medium green bell pepper
  • 2 cloves garlic
  • 12 small tomatoes
  • 4 cups chicken broth
  • 1 cup dry wine
  • 1 teaspoon salt, more or less
  • 1/2 teaspoon saffron
  • 1/2 teaspoon cumin
  • 1/4 tablespoon pepper
  • 1 can petit pois
  • 1 can asparagus
  • 1/2 can pimentos
  • 1/2 cup rice

How To Make chicken with rice chorrera

  • Step 1
    Cut chicken into eighths and fry in hot oil. Then in the same oil to make a sauce with onions and parsley. garlic, peppers and tomatoes
  • Step 2
    Add stock and simmer a few minutes until the chicken begins to soften.
  • Step 3
    Add wine, salt, toasted saffron, cumin, pepper and water from the peppers, asparagus and petit pois
  • Step 4
    Bring to a boil and add the rice. Cook about 30 minutes over low heat or in the oven to 400 degrees F. during the same time or until rice is tender
