easy chicken tortilla soup
This is one of my personal favorite comfort foods. Enjoy!

Ingredients
- 2 tablespoons olive oil
- 1 small onion
- 2 tablespoons garlic, minced
- 1 can green chilies, chopped (7 oz.)
- 2 cans tomatoes, diced (14.5 oz.)
- 1 can black beans, drained and rinsed (15.5 oz)
- 2 cups corn kernels, frozen
- 8 cups chicken broth
- 1 package taco seasoning mix
- 2 tablespoons cumin
- 4 large chicken breasts, boneless and skinless
- 2 tablespoons lime juice
- 1 cup cilantro, fresh, chopped
- GARNISH WITH:
- - tortilla strips
- - sour cream
- - avocado, sliced
- - cheddar cheese, shredded
- OPTIONAL, IF DESIRED:
- - sliced jalapeños
- - crushed red pepper
- - hot chili pepper sauce, such as sriracha or tabasco
How To Make easy chicken tortilla soup

Step 1In a large soup pot heat the olive oil. Add the onions and cook for 2 minutes. Once the onions have softened, add the garlic and cook for 1 minute.

Step 2Add the green chilies, tomatoes, beans, corn, and broth to the pot and bring to a boil; lower heat to simmer and add taco seasoning, cumin, and chicken breasts. Cook the chicken for 20 to 25 minutes.

Step 3Once chicken is tender, remove from pot and set aside to cool. When cool enough to handle, shred the chicken and place back into pot. Add lime juice and fresh cilantro.

Step 4Ladle into soup bowls. Garnish with tortilla strips, sour cream, sliced avocadoes, and/or shredded cheddar cheese.

Step 5Optional: May add heat to preferred individual taste. I use sliced jalapeños, crushed red pepper, or a favorite hot chili pepper sauce, such as Sriracha or Tabasco.
