chicken soup with homemade egg noodles
Whenever we were sick Grandma P.'s soup came to the rescue. She taught me how to make homemade noodles at visits to her home when I was young. Store bought noodles just don't compare. This soup is comforting, hearty and delicious!

Ingredients
- SOUP
- 2 - boneless chicken breasts or 2 small chicken breasts halves
- 1 box 48 oz. college inn chicken broth (low salt if available)
- 2 cups water
- 8 - baby carrots sliced or1 carrot peeled and sliced
- 2 - stalks celery preferably with the leaves chopped
- 1 - medium sized onion chopped
- 1/2 cup - rice (minute rice can be used)
- 1 teaspoon garlic powder
- 1 teaspoon fresh ground pepper
- 1/2 teaspoon salt (optional)
- HOMEMADE NOODLES
- 1 cup flour
- 1 - large egg
- 2 tablespoons olive oil
- 1 teaspoon water (may need a little more or less depending on texture)
- 1 teaspoon lemon herb seasoning (optional)
- - flour for rolling out noodle dough
How To Make chicken soup with homemade egg noodles

Step 1Wash chicken then put chicken, broth,cold water,carrots,celery,onion,rice and seasonings in a big pot on stove and heat on high until boils.

Step 2Stir to mix then turn down to low-medium heat and cook for 20-25 minutes until chicken and veggies are cooked. While chicken is cooking make the noodles (recipe below).

Step 3Remove chicken when done, cool, shred chicken into small pieces and put back into soup.

Step 4For noodles--In a small bowl add the flour and make a well in the center.Add to the center the egg,olive oil,water and herb seasoning.

Step 5With your fingers pinch pinch pinch until the flour is mixed in and it pulls away from the bowl. (you may use a fork if you don't want to use your fingers)

Step 6You should have a ball of dough the size of a large tennis ball. On counter top knead this dough for about 2 minutes until it is smooth and round.Cover with the bowl and let rest for 15-20 minutes.

Step 7Now take a little flour and sprinkle it on counter top and roll out the dough until it is thin. You should almost see through it. Sprinkle with a little flour again.

Step 8Fold the dough 3-4 times and then with a pizza cutter on a cutting board, cut the folded dough into strips. These can vary in thickness whatever you prefer.Unroll noodle strips then cut into 2 inch pieces.

Step 9Heat soup again and then add the noodle strips to the broth. The noodles are done when they float to the top of the broth.
