Ingredients

  • 32 ounces chicken broth, low salt
  • 2 cups water
  • 1/2 cup uncooked , long grain wild rice (not instant)
  • 1 bunch green onions, chopped with green tops
  • 1/2 cup butter
  • 3/4 cup plain flour
  • 1/2 teaspoon parsley flakes
  • 1 teaspoon black pepper
  • 2 cups whole milk
  • 2 cups cooked chicken, chopped
  • 1/2 pound cooked, drained, crumbled bacon

How To Make chicken rice soup

  • Step 1
    Combine broth,water, rice, and onions in large saucepan. Bring to a boil, reduce heat to simmer, cover and cook for 35-40 mins.
  • Step 2
    In medium pan, melt butter, whisk in flour,parsley and pepper. Cook 1 minute stirring constantly, until smooth and bubbly. Gradually add milk, cook until slightly thick, while stirring.
  • Step 3
    Add milk mixture to broth mixture, slowly. Add chicken, and bacon. Heat on low, at least 30 mins more. At this time add salt to taste.
