Ingredients For chicken rice soup

  • 32 oz
    chicken broth, low salt
  • 2 c
    water
  • 1/2 c
    uncooked , long grain wild rice (not instant)
  • 1 bunch
    green onions, chopped with green tops
  • 1/2 c
    butter
  • 3/4 c
    plain flour
  • 1/2 tsp
    parsley flakes
  • 1 tsp
    black pepper
  • 2 c
    whole milk
  • 2 c
    cooked chicken, chopped
  • 1/2 lb
    cooked, drained, crumbled bacon

How To Make chicken rice soup

  • 1
    Combine broth,water, rice, and onions in large saucepan. Bring to a boil, reduce heat to simmer, cover and cook for 35-40 mins.

    In medium pan, melt butter, whisk in flour,parsley and pepper. Cook 1 minute stirring constantly, until smooth and bubbly. Gradually add milk, cook until slightly thick, while stirring.

    Add milk mixture to broth mixture, slowly. Add chicken, and bacon. Heat on low, at least 30 mins more. At this time add salt to taste.
