All I have to say on this one is if you love Avocado and Chicken then you will love this soup. I love avocados so I always add more and more cilantro to my bowl of soup.

Ingredients
- 4 - tortillas, corn
- 1 - tomato, seeded and diced
- 1 1/2 tablespoons olive oil
- 1 medium onion, sliced thin
- 3 - jalapenos, fresh seeded and diced
- 4 cups chicken broth, low salt
- 1 1/2 cups shredded chicken breast
- 1/4 cup lime juice
- 1/4 cup cilantro, fresh, chopped
- 1 clove garlic
- 2 large avocados, diced
- - salt and pepper to taste
How To Make avocado and chicken soup

Step 1Preheat oven to 400 degrees. Cut tortillas into strips and bake on cookie sheet for 3 minutes or until lightly toasted. Place to the side.

Step 2Heat oil in large sauce pan over medium heat and cook onions, garlic and jalapenos until onions are tender and brown (about 4 to 5 minutes).

Step 3Stir in chicken, chicken broth, lime juice, and tomatoes. Add just enough salt and pepper to taste. Gently simmer until chicken is heated all the way through (about 3 to 5 minutes). Gently stir in Avocado and cilantro and heat through. Adjust seasoning if needed.

Step 4Seperate into bowls and top with baked tortilla strips and serve.
