All I have to say on this one is if you love Avocado and Chicken then you will love this soup. I love avocados so I always add more and more cilantro to my bowl of soup.

Ingredients

  • 4 - tortillas, corn
  • 1 - tomato, seeded and diced
  • 1 1/2 tablespoons olive oil
  • 1 medium onion, sliced thin
  • 3 - jalapenos, fresh seeded and diced
  • 4 cups chicken broth, low salt
  • 1 1/2 cups shredded chicken breast
  • 1/4 cup lime juice
  • 1/4 cup cilantro, fresh, chopped
  • 1 clove garlic
  • 2 large avocados, diced
  • - salt and pepper to taste

How To Make avocado and chicken soup

  • Step 1
    Preheat oven to 400 degrees. Cut tortillas into strips and bake on cookie sheet for 3 minutes or until lightly toasted. Place to the side.
  • Step 2
    Heat oil in large sauce pan over medium heat and cook onions, garlic and jalapenos until onions are tender and brown (about 4 to 5 minutes).
  • Step 3
    Stir in chicken, chicken broth, lime juice, and tomatoes. Add just enough salt and pepper to taste. Gently simmer until chicken is heated all the way through (about 3 to 5 minutes). Gently stir in Avocado and cilantro and heat through. Adjust seasoning if needed.
  • Step 4
    Seperate into bowls and top with baked tortilla strips and serve.
