All I have to say on this one is if you love Avocado and Chicken then you will love this soup. I love avocados so I always add more and more cilantro to my bowl of soup.

tortillas, corn
tomato, seeded and diced
1 1/2 Tbsp
olive oil
1 medium
onion, sliced thin
jalapenos, fresh seeded and diced
4 c
chicken broth, low salt
1 1/2 c
shredded chicken breast
1/4 c
lime juice
1/4 c
cilantro, fresh, chopped
1 clove
2 large
avocados, diced
salt and pepper to taste

How to Make Avocado and Chicken Soup


  • 1Preheat oven to 400 degrees. Cut tortillas into strips and bake on cookie sheet for 3 minutes or until lightly toasted. Place to the side.
  • 2Heat oil in large sauce pan over medium heat and cook onions, garlic and jalapenos until onions are tender and brown (about 4 to 5 minutes).
  • 3Stir in chicken, chicken broth, lime juice, and tomatoes. Add just enough salt and pepper to taste. Gently simmer until chicken is heated all the way through (about 3 to 5 minutes). Gently stir in Avocado and cilantro and heat through. Adjust seasoning if needed.
  • 4Seperate into bowls and top with baked tortilla strips and serve.
