Winter Stew

heidi farley

I took a basic stew recipe and added more spices and ingredients, but still kept it very simple and easy. At home, we love bacon and mushrooms, which are two of the add-ins I used, making it a little different and giving the stew a boost of flavor

How to Make Winter Stew

  • 1Place dressing and beef in large resealable plastic bag or in dish. Refrigerate atleast 1 hour to marinate. *If you chose to not marinade, brown meat on medium-high heat with 1 tablespoon oil. Both of these methods adds flavor and tenderizes the meat.
  • 2Cook bacon in large pot or dutch oven on medium heat until crisp. Remove bacon from pot using slotted spoon.Drain excess bacon fat, leaving 1 tablespoon in pot for next step
  • 3Drain excess bacon fat, leaving 1 tablespoon in pot for next step
  • 4Add onion and mushrooms to pot; cook on medium heat 15 min or until softened. Remove beef from marinade. Add beef, carrots, potatoes, tomatoes with their liquid, broth, bacon, garlic powder and salt and pepper to pot.
  • 5Bring to a boil, stirring occasionally. Reduce heat to low; cover and simmer for 2 hours. Add italian seasoning and uncover last 15 min, to thicken sauce.... Stew will be thicker and more flavorfull when leftovers are placed in refrigerator overnight!
