vegetable beef soup
This is similar to my Grandmother's Homemade soup. She taught me to cook "with the patience of a Saint". This soup served steaming hot with homemade or store bought biscuits piled with yummy butter is a perfect supper for cool weather.

Ingredients
- 2 pounds soup beef
- 1 small cabbage, sliced
- 1 pound bag frozen mixed vegetables
- 2 - carrots, chopped
- 2 - medium onions, chopped
- 4 - medium white potatoes, cubed
- 2 - turnips, cubed
- 3 stalks celery, sliced
- 2 cans (medium) tomatoes
- 1 can beef broth
- 1 can vegetable broth
- 2 or 3 - beef bouillon, cubes (to taste)
- - salt, pepper and parsley to taste
How To Make vegetable beef soup

Step 1Cut beef into small pieces to ensure tenderness. Brown in small amt. olive oil until tender (in large soup pot). After beef is browned, add onions and celery. Saute w/ beef for few minutes until tender.

Step 2Prepare remaining veggies per recipe. Add to browned beef, onions and celery, along with tomatoes, broths, and seasonings. Can also add water as needed.

Step 3Cook on top of stove in covered soup pot until done. Approximately 45 to 60 mins. Your kitchen will smell incredible.

Step 4This soup can be frozen and re-heated in the microwave. The secret to delicious flavor is browning the beef well.

Step 5Serve with hot biscuits and enjoy.
