    onion, diced
  • 2
    carrots, peeled and diced
  • 2
    celery stalks, diced
  • 1 c
    diced potatoes
  • 1 c
  • 1 c
  • 2 can(s)
    diced tomatoes with juice
  • 1 large
    can tomato sauce
  • 3 to 4
    beef bouillon, cubes
  • 1 lb
    ground beef (roast and steak can be used), diced or shredded
  • 2 c
  • 2 Tbsp
    red wine vinegar
  • ·
    salt and pepper, to taste

How to Make Vegetable Beef Soup


  1. heat onions, celery and carrots in a large stockpot with some olive oil. add the potatoes and cook for about 2 minutes.
  2. add in your meat and other ingredients. if soup seems to thick, add more water.
  3. bring to a boil, then reduce and simmer for 30-45 minutes. serve with cornbread, elbow macaroni or just plain.
