red wine vinegar
salt and pepper, to taste

heat onions, celery and carrots in a large stockpot with some olive oil. add the potatoes and cook for about 2 minutes.
add in your meat and other ingredients. if soup seems to thick, add more water.
bring to a boil, then reduce and simmer for 30-45 minutes. serve with cornbread, elbow macaroni or just plain.
