Ingredients
- 1 - onion, diced
- 2 - carrots, peeled and diced
- 2 - celery stalks, diced
- 1 cup diced potatoes
- 1 cup corn
- 1 cup peas
- 2 cans diced tomatoes with juice
- 1 large can tomato sauce
- 3 to 4 - beef bouillon, cubes
- 1 pound ground beef (roast and steak can be used), diced or shredded
- 2 cups water
- 2 tablespoons red wine vinegar
- - salt and pepper, to taste
How To Make vegetable beef soup

Step 1heat onions, celery and carrots in a large stockpot with some olive oil. add the potatoes and cook for about 2 minutes.

Step 2add in your meat and other ingredients. if soup seems to thick, add more water.

Step 3bring to a boil, then reduce and simmer for 30-45 minutes. serve with cornbread, elbow macaroni or just plain.
