vegetable beef soup
This is a great way to clean out left over veggies. My neighbor lady keeps a container for little dabs of veggies in her freezer. When it gets full, she makes soup. So, this is inspired by her. You could also do this in a crock pot. Play around with the flavors and veggies your family likes. Freezes well.

How To Make vegetable beef soup
-
Step 1Scramble cook the ground beef and onions until no longer pink. Drain off any fat.
-
Step 2Add V8 and beef broth, potatoes & carrots. Let this simmer until the potatoes and carrots are mostly tender.
-
Step 3Add mixed left over veggies (4-6 cups) OR 2-3 bags of frozen mixed veggies 1 can chopped stewed tomatoes 1 can corn 1 can green beans (or whatever veggies you want to add) 1 can beans (I use rinsed kidney beans) salt and pepper to taste Sometimes I add a bit of oregano or thyme... whatever makes you happy. Sometimes I add a couple of bullion cubes or some Kitchen Bouquet if it isn't beefy enough. Kick it up with a bit of cayenne pepper or some hot sauce if you like.
