This is a very good soup and so easy to make. I always make up a big batch and then freeze the left overs for a future dinner.

Ingredients

  • 1 lb
    lean hamburger
  • 1 large
    onion ; chopped
  • 4 c
    water
  • 1 (10oz) can(s)
    enchilada sauce
  • 1 (15oz) can(s)
    tomato sauce
  • 2 (10oz) can(s)
    tomatoes with green chili's
  • 1 (10.75oz can(s)
    tomato soup
  • 1 (15oz) can(s)
    red kidney beans ; drained
  • 1 (15oz) can(s)
    pinto beans
  • 1 (15oz) can(s)
    black beans
  • 1 can(s)
    corn niblets
  • 1 can(s)
    sliced black olives
  • 1 small
    can jalapenos , optional
  • 1 pkg
    taco seasoning mix
  • ·
    salt and pepper
  • 1 tsp
    chopped garlic(from a jar)
  • 1 tsp
    parsely flakes
  • GARNISH

  • ·
    sour cream
  • ·
    shredded cheddar cheese
  • ·
    frito's corn chips

How to Make Taco Soup

Step-by-Step

  1. In a large dutch oven or pot ; cook hamburger and chopped onion until browned , drain off grease.
  2. Add all the remaining ingredients except garnish items ; Mix all together.
  3. Bring to a boil ; reduce the heat to low and simmer for at least 1 hour.
  4. Serve in individual bowls and add sour cream , cheese and broken up corn chips . mix and enjoy !
