Portuguese Soup

A family favorite for many years. I grew up on this soup. We would come home from a rainy day @ school and have this and Sour dough French bread for dinner with a lovely salad.

Ingredients

  • 3 lg
    large beef shanks large and meaty
  • water to cover
  • 1
    onion chopped
  • salt and pepper to taste
  • 2 lg
    potatoes cut in 1/4's
  • 1 bunch
    mustard greens, torn.
  • 8 oz
    can tomato sauce
  • 1
    handfull elbow macaroni

How To Make

    Bring to boil and simmer covered, several hours, until meat very tender Add 2 large Potatoes cut in 1/4's 1 bunch mustard greens, torn. 1 8 0z can tomato sauce 1 handful elbow macaroni Continue on low heat until potatoes soft- the longer the better- best the next day (Refrigerate overnight) Serve in soup bowl with green pepper vinegar
