A friend gave this recipe to me which had little smokies PLUS the hamburger meat. It was too much. Here is my "tweaked" recipe. I also hit a homerun with the meat mixture!

  • 1 lb
    hamburger meat
  • 1 lb
    italian sausage, no casings
  • 1 lb
    italian sausage, hot, no casings
  • 1 c
    chopped onions
  • 1 c
  • 1 c
    red bell pepper
  • 3 clove
    mashed garlic
  • 1 tsp
    salt and pepper
  • 3
    cans of campbells soup- minestrone soup
  • 1
    can of rotel
  • 1 box
    chicken stock

How to Make Minestrone Soup PLUS


  1. Brown meats along with onions, garlic, celery, bell pepper and garlic. Drain well. IMPORTANT: Save half for later recipes! Makes a great meat blend for spaghetti sauce.
  2. In large soup pot, add meat, 3 cans soup, Rotel, 1 carton chicken broth, parsley and basil (dried).
  3. Bring to a boil then lower heat to simmmer. Good with cornbread. Tastes like you have been cooking all afternoon!
