My family loves this soup. I originally called it "Bacon Cheeseburger Soup," but my hubby suggested I call it "potato soup with meat." So I settled on loaded potato soup.

Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 3/4 cup chopped carrots
- 3/4 cup chopped celery
- 4 cups beef stock
- 2 cups water
- 4 cups diced potatoes
- 1 1/2 cups whole milk
- 1 tablespoon basil
- 1/8 cup parsley flakes
- 12 ounces 2% velveeta like cheese
- 5 slices bacon, cooked crisp, crumbled
- - salt/pepper to taste
How To Make loaded potato soup

Step 1Brown ground beef and onion together in soup pot. Drain, if needed.

Step 2Add potatoes, carrots, celery, stock, and water, basil, and parsley. Cook until potatoes are tender. (I lightly mash the mixture, but leave some potatoes in chunks.)

Step 3Add in milk, bacon, and velveeta and salt/pepper to taste.

Step 4Allow to simmer until cheese melts, stirring occasionally to keep cheese from sticking.
