My family loves this soup. I originally called it "Bacon Cheeseburger Soup," but my hubby suggested I call it "potato soup with meat." So I settled on loaded potato soup.

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 3/4 cup chopped carrots
  • 3/4 cup chopped celery
  • 4 cups beef stock
  • 2 cups water
  • 4 cups diced potatoes
  • 1 1/2 cups whole milk
  • 1 tablespoon basil
  • 1/8 cup parsley flakes
  • 12 ounces 2% velveeta like cheese
  • 5 slices bacon, cooked crisp, crumbled
  • - salt/pepper to taste

How To Make loaded potato soup

  • Step 1
    Brown ground beef and onion together in soup pot. Drain, if needed.
  • Step 2
    Add potatoes, carrots, celery, stock, and water, basil, and parsley. Cook until potatoes are tender. (I lightly mash the mixture, but leave some potatoes in chunks.)
  • Step 3
    Add in milk, bacon, and velveeta and salt/pepper to taste.
  • Step 4
    Allow to simmer until cheese melts, stirring occasionally to keep cheese from sticking.
