This is what I made up last night and Barry said it was better than East Side Mario's :D. This is so easy to whip together, you can use frozen precooked meat balls or make your own nice and fresh :D

Ingredients

  • ITALIAN MEATBALLS:
  • - 1 lb. lean ground beef
  • - 2 eggs, beaten
  • - ¼ cup breadcrumbs
  • - 2 tablespoon grated parmesan cheese
  • - 1 tsp dried basil
  • - 1 tsp garlic powder
  • - salt and pepper
  • SOUP
  • - 6 cups chicken broth
  • - 2 cup spinach, chopped
  • - 1 cup orzo
  • - ¾ cup diced carrots
  • - prepared meatballs
  • - 1 tsp garlic powder, (i use granulated garlic)
  • - 1 tsp basil
  • - 1 tsp oregano
  • - salt and pepper to taste

How To Make italian wedding soup

  • Step 1
    Prepare your meat balls ahead of time. In medium bowl, combine beef to onion and shape into small meatballs. You want them small enough to easily eat in a spoonful of soup. Bake 350 for 20 minutes
  • Step 2
    For your soup, In large stockpot, add your broth and everything else, except pasta. Bring to a boil then turn down and simmer for about 30 min. Add orzo and cook for about 10 more min or till orzo is cooked. Enjoy
