Ingredients
- 1 pound lean ground beef
- 1 large yellow onion
- 1 tablespoon chili powder
- 3 medium potatoes, peeled and diced
- 1/2 pound carrots, peeled and diced
- 1 can (15 oz) white hominy
- 1 can (15 oz) tomatoes, diced
- 1 can (4 oz) green chilies, chopped
- 1 1/2 cups beef broth
- salt and pepper, to taste
- 1 teaspoon cumin powder
How To Make hopi hominy stew

Step 1In a large pot over medium heat, cook ground beef until evenly brown. Stir in onions, and saute until soft and translucent.

Step 2Season with chili powder, and cook for about 2 minutes. Add potatoes, carrots, hominy, tomatoes and chilies and cumin. Pour in beef broth. Season to taste with salt and pepper.

Step 3Reduce heat, and simmer 2 hours, or until potatoes and carrots are tender.
