Easy French Onion Soup

I make this as a quick easy dinner, but if I have the extra time I will pick up some veal bones from my butcher roast them in oven uncovered for 1 hour at 350 then simmer them in the broth for a real richness.

Ingredients

  • 3 box
    low sodium beef stock
  • 7 lb
    white onions
  • 4 clove
    garlic-minced
  • 3
    beef bullion cubes
  • 4 Tbsp
    unsalted butter
  • 1 c
    chardonnay
  • 1/2 bunch
    itialian flat leaf parsley-chopped
  • 1 tsp
    thyme-dried
  • 4
    bay leaves
  • 1 tsp
    oregano, dried
  • 1 tsp
    basil, dried
  • 1 lb
    provolone cheese
  • ·
    salt and pepper to taste
  • IF YOU HAVE THE TIME FOR EXTRA RICHNESS

  • 4 lb
    veal or beef bones-roasted for 1 hour

How to Make Easy French Onion Soup

Step-by-Step

  1. Saute onions and garlic in butter until transparent
  2. Add rest of ingredients and bring to a boil.
  3. Reduce heat to simmer for at least 1 hour. Longer is better
  4. If using the roasted bones add now also
  5. I serve with a slice of provolone on bottom of bowl, a slice of sourdough baguette, soup, the another slice of provolone on top. I do not bake mine but you can if you choose.
