easy french onion soup
I make this as a quick easy dinner, but if I have the extra time I will pick up some veal bones from my butcher roast them in oven uncovered for 1 hour at 350 then simmer them in the broth for a real richness.

Ingredients
- 3 boxes low sodium beef stock
- 7 pounds white onions
- 4 cloves garlic-minced
- 3 - beef bullion cubes
- 4 tablespoons unsalted butter
- 1 cup chardonnay
- 1/2 bunch itialian flat leaf parsley-chopped
- 1 teaspoon thyme-dried
- 4 - bay leaves
- 1 teaspoon oregano, dried
- 1 teaspoon basil, dried
- 1 pound provolone cheese
- - salt and pepper to taste
- IF YOU HAVE THE TIME FOR EXTRA RICHNESS
- 4 pounds veal or beef bones-roasted for 1 hour
How To Make easy french onion soup

Step 1Saute onions and garlic in butter until transparent

Step 2Add rest of ingredients and bring to a boil.

Step 3Reduce heat to simmer for at least 1 hour. Longer is better

Step 4If using the roasted bones add now also

Step 5I serve with a slice of provolone on bottom of bowl, a slice of sourdough baguette, soup, the another slice of provolone on top. I do not bake mine but you can if you choose.
