easy french onion soup

I make this as a quick easy dinner, but if I have the extra time I will pick up some veal bones from my butcher roast them in oven uncovered for 1 hour at 350 then simmer them in the broth for a real richness.

Ingredients

  • 3 boxes low sodium beef stock
  • 7 pounds white onions
  • 4 cloves garlic-minced
  • 3 - beef bullion cubes
  • 4 tablespoons unsalted butter
  • 1 cup chardonnay
  • 1/2 bunch itialian flat leaf parsley-chopped
  • 1 teaspoon thyme-dried
  • 4 - bay leaves
  • 1 teaspoon oregano, dried
  • 1 teaspoon basil, dried
  • 1 pound provolone cheese
  • - salt and pepper to taste
  • IF YOU HAVE THE TIME FOR EXTRA RICHNESS
  • 4 pounds veal or beef bones-roasted for 1 hour

How To Make easy french onion soup

  • Step 1
    Saute onions and garlic in butter until transparent
  • Step 2
    Add rest of ingredients and bring to a boil.
  • Step 3
    Reduce heat to simmer for at least 1 hour. Longer is better
  • Step 4
    If using the roasted bones add now also
  • Step 5
    I serve with a slice of provolone on bottom of bowl, a slice of sourdough baguette, soup, the another slice of provolone on top. I do not bake mine but you can if you choose.
