beef veggie soup

it is finally coolin down so time to start makin soups... nothin better on cool fall day than hot bowl of soup... this in tryin to get more veggies in me i came up with this...jus a small amount of meat for flavor and lots of healthy veggies

Ingredients

  • 2/3 pound cubed beef stew meat
  • 1 quart fresh frozen tomatoes
  • 2 small carrots,chopped
  • 2 small white potatoes,cubed
  • 1 bunch green onions,sliced
  • 1 medium white onion,chopped
  • 1 cup celery with leaves,chopped
  • 1 cup mixed color bell peppers,chopped
  • 1 box frozen cut green beans,
  • 1 cup frozen broccoli,chopped
  • 1/2 cup frozen corn
  • 1 package [8 oz] sliced fresh mushrooms
  • 1/2 cup frozen green peas
  • 1/2 package [10 oz bag] baby spinach leaves
  • 2 small each summer and zuchinni squash,grated
  • 6 quarts water
  • - spice pack[tie into cheesecloth] 3-4 cloves garlic,2 bay leaves,several sprigs tyme,several whole peppercorns,1 tbs sea salt,handful parsley,handful fresh chives
  • - seasoned salt and fresh ground pepper ,to taste

How To Make beef veggie soup

  • Step 1
    in lg stock pot brown beef in small amount of cookin oil with seasoned salt and pepper remove from pan add veggies in order given tomatoes,bring to boil then green and white onion,celery carrot, potato,bell pepper,and broccoli bring back to boil lower temp cook 15 min
  • Step 2
    now add spice pack and water and all the rest of veggies except spinach and meat bring to boil lower temp again simmer to 15-20 min add spinach cook til it wilts
  • Step 3
    now laddle into soup bowls and enjoy... this is great with thick crusty bread
