Ingredients

  • 5 tablespoons all purpose flour
  • 60 grams butter (4 tbsp. or 1/2 cup)
  • 1 medium onion, cut in strips
  • 1 liter homemade beef stock (4 cubes)
  • 100 grams grated gruyere cheese (1 to 1-1/4 cups)
  • 1 dash red wine, if desired

How To Make basler mehlsuppe (basel flour soup)

  • Step 1
    Cook the flour in a dry, hot skillet until light brown. Add butter to flour and mix.
  • Step 2
    Add onions and cook until softened, about 10 or 15 minutes. Add beef stock, bring to a boil, and simmer 20 minutes. Serve with grated cheese.
  • Step 3
    Add a dash of red wine if desired.
