Ingredients For basler mehlsuppe (basel flour soup)

    all purpose flour
  • 60 g
    butter (4 tbsp. or 1/2 cup)
  • 1 md
    onion, cut in strips
  • 1 l
    homemade beef stock (4 cubes)
  • 100 g
    grated gruyere cheese (1 to 1-1/4 cups)
  • 1 dash
    red wine, if desired

How To Make basler mehlsuppe (basel flour soup)

    Cook the flour in a dry, hot skillet until light brown. Add butter to flour and mix.

    Add onions and cook until softened, about 10 or 15 minutes. Add beef stock, bring to a boil, and simmer 20 minutes. Serve with grated cheese.
