Ingredients
- 5 tablespoons all purpose flour
- 60 grams butter (4 tbsp. or 1/2 cup)
- 1 medium onion, cut in strips
- 1 liter homemade beef stock (4 cubes)
- 100 grams grated gruyere cheese (1 to 1-1/4 cups)
- 1 dash red wine, if desired

Step 1Cook the flour in a dry, hot skillet until light brown. Add butter to flour and mix.

Step 2Add onions and cook until softened, about 10 or 15 minutes. Add beef stock, bring to a boil, and simmer 20 minutes. Serve with grated cheese.
