white beans with chicken stock and tomatoes

this is my french version of soup beans serve with cornbread and its so good.

Ingredients

  • 1/2 pound dried white beans
  • 6 cups homemade chicken stock or store bought chicken stock
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon minced garlic
  • 2 medium carrots chopped
  • 1 medium celery stalk finely chopped
  • 1 medium onion, finely chopped
  • 2 medium tomatoes cored and sectioned into 4 sections
  • 2 tablespoons butter

How To Make white beans with chicken stock and tomatoes

  • Step 1
    Soak beans for several hours.After soaking drain water out of beans. place the beans in a large pot with all but a cup of the chicken stock . add the thyme , garlic, carrrrrot, celery, onion. add more stock if nessacery. cover pot with lid turn on the heat to high , bring to a boil then turn down to a steady simmer.
  • Step 2
    Cook, stirring occasionally, until beans are tender, about an hour. add salt and pepper to taste. Continue to cook, adding water if nessecery until beans are quite soft 20 minutes.
  • Step 3
    add another cup stock bring to a bubble add add your tomatoes make sure seeds are removed. cook an additional 15 minutes stir in the butter cool slightly serve.
