Ingredients
- 1/2 pound dried white beans
- 6 cups homemade chicken stock or store bought chicken stock
- 1 teaspoon fresh thyme leaves
- 1 tablespoon minced garlic
- 2 medium carrots chopped
- 1 medium celery stalk finely chopped
- 1 medium onion, finely chopped
- 2 medium tomatoes cored and sectioned into 4 sections
- 2 tablespoons butter
How To Make white beans with chicken stock and tomatoes

Step 1Soak beans for several hours.After soaking drain water out of beans. place the beans in a large pot with all but a cup of the chicken stock . add the thyme , garlic, carrrrrot, celery, onion. add more stock if nessacery. cover pot with lid turn on the heat to high , bring to a boil then turn down to a steady simmer.

Step 2Cook, stirring occasionally, until beans are tender, about an hour. add salt and pepper to taste. Continue to cook, adding water if nessecery until beans are quite soft 20 minutes.

Step 3add another cup stock bring to a bubble add add your tomatoes make sure seeds are removed. cook an additional 15 minutes stir in the butter cool slightly serve.
