This is the simplest yet most delicious Chili if you're looking for a crowd pleaser. With only 6 ingredients its easy to whip up a batch and a nice change from the original chili recipes. Try it once and you'll be hooked! I like to sometimes add diced onions and mushrooms to this recipe depending on the crowd. Top it off with sour cream, fresh cilantro and crushed taco chips!! Yum!!

Ingredients

  • 2 LG jars randall's northern beans
  • 2 cans any variety chicken broth
  • 4 ounces pepper jack cheese cubed or shredded
  • 3 ounces cream cheese cubed
  • 3/4 jar any variety mild salsa
  • 1 1/2 pounds chicken breasts, boneless and skinless cubed

How To Make white bean chicken chili

  • Step 1
    Cook cubed chicken breast pieces in skillet on medium heat in a sprayed skillet until done. Set aside.
  • Step 2
    while chicken is cooking pour the chicken broth in a dutch oven pan adding chunked cream cheese and bring to a gentle boil. Whisk mixture until cream cheese no longer has chunks.
  • Step 3
    pour the rest of the ingredients into the broth mixture adding cooked chicken and continue to cook on medium heat until pepper jack cheese is melted stirring occasionally. ( about 15 minutes) Enjoy!
