This is a very flavorful soup and delicious served with cornbread. I sometimes substitute a cup of cubed ham for the sausage. I do like the sausage the best. You will get compliments on this soup. Double if you have more that 4 people.

Ingredients

  • 1/2 pound great northern beans
  • 1/2 pound hot or mild italian sausage, browned
  • 2 - celery ribs, diced
  • 2 - carrots, peeled and diced
  • 1 - bay leaf
  • - salt & pepper to taste
  • 2 cans chicken broth
  • 1 - small onion, diced
  • 2 - garlic cloves, minced
  • 1 can petite diced tomatoes
  • 1 teaspoon basil
  • 1 teaspoon 0regano
  • 1 cup cooked greens,iused collards.

How To Make tuscan bean soup

  • Step 1
    Cook beans according to package instructions
  • Step 2
    Add remaining ingredients and cook until vegetables are tender.
  • Step 3
    I sometimes substitute a cup of cubed ham for the sausage.
