This recipe can be strictly vegetarian or made with chicken stock. You can add chicken (shredded or cubed) to the recipe. Spices can always be altered to taste. If you don't like cilantro, add tumeric, cayenne peppers, or dried red peppers to the recipe.

- 2 cups lentils
- 1/4 cup oil (olive, canola)
- 1 onion, peeled and chopped
- 2 stalks celery diced
- 1/4 cup minced garlic
- 1 can vegetable juice
- 32 ounces broth (chicken or vegetable)
- 1/4 teaspoon ground cumin
- 1/4 teaspoon cilantro (or 1/4 cup fresh)
- 2 tablespoons corn starch
- chili spices to taste
