This recipe can be strictly vegetarian or made with chicken stock. You can add chicken (shredded or cubed) to the recipe. Spices can always be altered to taste. If you don't like cilantro, add tumeric, cayenne peppers, or dried red peppers to the recipe.

Ingredients For red lentil chili

  • 2 c
    lentils
  • 1/4 c
    oil (olive, canola)
  • 1
    onion, peeled and chopped
  • 2 stalk
    celery diced
  • 1/4 c
    minced garlic
  • 1 can
    vegetable juice
  • 32 oz
    broth (chicken or vegetable)
  • 1/4 tsp
    ground cumin
  • 1/4 tsp
    cilantro (or 1/4 cup fresh)
  • 2 Tbsp
    corn starch
  • chili spices to taste

How To Make red lentil chili

  • 1
    Cook on HIGH 4 hours or LOW 8 hours. Stir; serve.
