How to Make Pinto Beans
- Soak beans over night in water.
- Dice yellow onion. Heat large pot or dutch oven to medium heat and add olive oil. When olive oil is heated add onion and stir until translucent (about 5 minutes). Add garlic and stir 1 minute.
- Add beans and chicken or vegetable broth. Add enough broth to cover beans completely. Add meat of your choice. Cover pot and cook for 4 hours or until beans are soft. You will have to come check on the beans about every 30 minutes stirring and adding water as need to keep beans covered. Salt to taste. Serve with cornbread.
