A great recipe to use up veggies that might be getting old. I call it my clean out the frig soup :)

Ingredients

  • 1 pkg
    pork neck bones
  • 1 lb
    dried beans ( i use 15 bean mix)
  • 8 qt
    water
  • 1 Tbsp
    thyme
  • 1 Tbsp
    oregano
  • 1 tsp
    sage
  • 1 bunch
    greens (kale, swiss chard or what ever you have)
  • 3
    celery stalks plus center leaf sections
  • 2
    leeks
  • 2
    carrots
  • 3 clove
    garlic
  • 3
    vegetable bouillon cubes
  • ·
    salt and pepper to taste
  • 1 can(s)
    diced tomatoes

How to Make Neck bone bean soup-kl

Step-by-Step

  1. Presoak beans according to which method you prefer on the package.
  2. Drain and rinse beans.
  3. Slice greens, celery, carrots and leeks. Chop the garlic.
  4. Place beans back into the pot with all remaining ingredients.
  5. Cook covered on medium heat until beans are soft, stirring occasionaly. 2 to 3 hour depending on beans used.
