A great recipe to use up veggies that might be getting old. I call it my clean out the frig soup :)

Ingredients

  • 1 package pork neck bones
  • 1 pound dried beans ( i use 15 bean mix)
  • 8 quarts water
  • 1 tablespoon thyme
  • 1 tablespoon oregano
  • 1 teaspoon sage
  • 1 bunch greens (kale, swiss chard or what ever you have)
  • 3 - celery stalks plus center leaf sections
  • 2 - leeks
  • 2 - carrots
  • 3 cloves garlic
  • 3 - vegetable bouillon cubes
  • - salt and pepper to taste
  • 1 can diced tomatoes

How To Make neck bone bean soup-kl

  • Step 1
    Presoak beans according to which method you prefer on the package.
  • Step 2
    Drain and rinse beans.
  • Step 3
    Slice greens, celery, carrots and leeks. Chop the garlic.
  • Step 4
    Place beans back into the pot with all remaining ingredients.
  • Step 5
    Cook covered on medium heat until beans are soft, stirring occasionaly. 2 to 3 hour depending on beans used.
