mom-mom's lima bean soup

My mother would make this quite often when I was growing up. I'm not always big on Lima beans, but I did like this soup. :)

Ingredients

  • 1 package large size lima beans, dried
  • 2 cups pork, cut up (or more if you like)
  • 2 - potatoes, diced
  • 1 can white shoepeg corn, undrained
  • 2 - carrots, grated fine
  • - ketchup, 2 or 3 good squirts
  • - water, enough to cover
  • - salt & pepper, to taste
  • - pork gravy, if available (but not necessary)

How To Make mom-mom's lima bean soup

  • Step 1
    Soak Lima beans overnight in a pot of water. Drain.
  • Step 2
    Combine all ingredients, including beans, in large pot with the water, enough to cover ingredients.
  • Step 3
    Cook at a slow boil until potatoes are tender.
