Another find @ my local supermarket from many years ago.This is delicious.It's so good with Sour Dough rolls or Bread.When I make a pot it's gone in one day.Less than $2.50 per person.

Ingredients
- - 2 tblsp extra virgin olive oil
- - 1 lb hot italian poultry sausage
- - 2 cans cannellini beans (15 1/2 oz.each) cannellini beans are large white kidney beans
- - 1 can (14 1/2 oz) chicken broth
- - 1 jar (10 oz.) roasted red peppers
- - 1 tblsp dried parsley
- - 1/2 teaspoon dried oregano
How To Make mediterranean stew with poultry sausge

Step 1Pull casings off the sausage and cut sausage into bite size pieces and then saute in olive oil in Lg.saucepan until cooked through,about 5 minutes

Step 2Drain the Cannellini beans.In a small bowl mash one can of beans with a fork,add to the sausage.Save other can for final step.

Step 3Drain and cut the Roasted red peppers into thin strips.

Step 4Add all the remaining ingredients to the saucepan,Bring to a boil,reduce heat and simmer for about 5 minutes.Season with salt and pepper to taste.
