This is nice and simple for a weeknight dinner with some cornbread. Enjoy.

Ingredients

  • 2 cans black beans, drained (15.5 oz ea.)
  • 2 cups chicken stock (or broth), low sodium, low fat
  • 1 cup salsa, medium (or your preference)
  • 2 teaspoons cumin, powdered
  • 1/4 cup onion, chopped
  • 1/4 cup lime juice
  • 1 teaspoon olive oil
  • 1/4 cup fresh cilantro, chopped (plus more for garnish, if desired)
  • - light sour cream, for garnish (if desired)

How To Make lime cilantro black bean soup

  • Step 1
    Saute the onions in the oil.
  • Step 2
    Put everything else except for one can of black beans into a blender or food processor, and puree.
  • Step 3
    Pour mixture into the pot with the sauteed onions.
  • Step 4
    Add the remaining, whole black beans, and heat through. Serve with cilantro and sour cream for garnish (if desired).
  • Step 5
    Note: this is also good with crumbled tortilla chips sprinkled on top. Maybe some shredded cheese of your choice.
