This is nice and simple for a weeknight dinner with some cornbread. Enjoy.

Food Processor


2 can(s)
black beans, drained (15.5 oz ea.)
2 c
chicken stock (or broth), low sodium, low fat
1 c
salsa, medium (or your preference)
2 tsp
cumin, powdered
1/4 c
onion, chopped
1/4 c
lime juice
1 tsp
olive oil
1/4 c
fresh cilantro, chopped (plus more for garnish, if desired)
light sour cream, for garnish (if desired)

How to Make Lime Cilantro Black Bean Soup


  • 1Saute the onions in the oil.
  • 2Put everything else except for one can of black beans into a blender or food processor, and puree.
  • 3Pour mixture into the pot with the sauteed onions.
  • 4Add the remaining, whole black beans, and heat through.
    Serve with cilantro and sour cream for garnish (if desired).
  • 5Note: this is also good with crumbled tortilla chips sprinkled on top. Maybe some shredded cheese of your choice.
