Ingredients
- 2 cans black beans, drained (15.5 oz ea.)
- 2 cups chicken stock (or broth), low sodium, low fat
- 1 cup salsa, medium (or your preference)
- 2 teaspoons cumin, powdered
- 1/4 cup onion, chopped
- 1/4 cup lime juice
- 1 teaspoon olive oil
- 1/4 cup fresh cilantro, chopped (plus more for garnish, if desired)
- - light sour cream, for garnish (if desired)
How To Make lime cilantro black bean soup

Step 1Saute the onions in the oil.

Step 2Put everything else except for one can of black beans into a blender or food processor, and puree.

Step 3Pour mixture into the pot with the sauteed onions.

Step 4Add the remaining, whole black beans, and heat through. Serve with cilantro and sour cream for garnish (if desired).

Step 5Note: this is also good with crumbled tortilla chips sprinkled on top. Maybe some shredded cheese of your choice.
