I make of jars and give to neighbors and friends with little bags of croutons to go with

Ingredients

  • 1 package 16 0z bag dry lentils
  • 1 bag 16 oz frozen bag cut leaf spinach
  • 4 cloves fresh garlic chopped small
  • 1/2 cup olive oil
  • - salt and pepper to taste

How To Make lentisl and spinach

  • Step 1
    Wash lentils, then put in a large pot with water covering (about 8 cups) boil for about20 min
  • Step 2
    Saute garlic in olive oil till tender( do not burn)
  • Step 3
    Add spinach and garlic and oil to lentils. add salt and pepper . simmer for about 25min or until lentils are tender (serve or freeze )
  • Step 4
    Optional >>>>>> I serve with croutons and grated Romano cheese
