beans & sausage soup - or not
My mother-in-law, Mary Bales, gave me this recipe about 25 years ago and I have made and enjoyed it many, many times. I hope you enjoy it too.

Ingredients
- 1 package 15-style bean soup mix (found with dry beans)
- 1 pound beef or pork smoked sausage, sliced & quartered
- 1 - onion, chopped
- 1 clove garlic or 1/4 tsp. garlic powder
- 1/2 teaspoon salt
- 1 medium can tomatoes
- 1 can tomatoes and chiles
- 1 tablespoon lemon juice
How To Make beans & sausage soup - or not

Step 1Soak the beans overnight in Dutch oven full of cold water. Pour off water and add 8 cups fresh water to the beans.

Step 2Add sausage, onion, garlic, salt, can of tomatoes, and lemon juice.

Step 3Bring to a boil and then simmer, covered, for about 4 hours. Then add the can of tomatoes and green chilies. Simmer at least another half hour. Remove cover and let cook down a bit.

Step 4NOTE: You may use the seasoning packet that comes with the beans, but I don't use it. Instead of serving as a soup, I serve it over hot rice with some garlic bread.
