Ingredients

  • 1 Tbsp
    oil
  • 1 small
    onion, chopped
  • 2 clove
    garlic, minced
  • 1 can(s)
    15 oz. black beans, rinsed and drained
  • 1 c
    tomatoes with juice
  • 1 c
    frozen corn, thawed
  • 1 Tbsp
    tomatoe paste
  • 1 Tbsp
    chili powder
  • 1 tsp
    ground cumin
  • 1/2 tsp
    sugar
  • 1/2
    green pepper, diced

How to Make Hearty Black Bean and Corn Chili

Step-by-Step

  1. In skillet heat oil over medium heat. Add onion and garlic; cook 2 minutes.
  2. Stir in beans,tomatoes with juice, corn, tomato paste, chili powder, cumin and sugar.
  3. Cover and reduce heat to low; simmer until thickened, 15-20 minutes. Add pepper; cook 5 minutes.
