Ingredients

  • 2 tablespoons olive oil
  • 1 - onion, chopped
  • 3 teaspoons minced garlic
  • 8-1/2 cups chicken broth
  • 1 - 12 oz pkg dried lentils, rinsed, drained
  • 1 cup chopped smoked ham, from the deli, or left-over ham.
  • 3 - carrots, finely chopped
  • 1 - bayleaf
  • 1 teaspoon salt
  • 3/4 teaspoon pepper

How To Make healthy lentil soup

  • Step 1
    In lg pot, heaat oil over medium heat. Saute onion & garlic in oil 3 mins. Add broth, lentils, carrots, ham, bayleaf, salt & pepper.
  • Step 2
    Bring pot to boiling over med-high heat. Reduce heat to low.
  • Step 3
    simmer 45 min, or until lentils are tender. Remove bayleaf before serving.
