A very healthy, warming soup for a cold night.

Ingredients For healthy lentil soup

2 Tbspolive oil

1onion, chopped
-
3 tspminced garlic

8-1/2 cchicken broth
-
112 oz pkg dried lentils, rinsed, drained

1 cchopped smoked ham, from the deli, or left-over ham.

3carrots, finely chopped
-
1bayleaf
-
1 tspsalt
-
3/4 tsppepper
How To Make healthy lentil soup

1In lg pot, heaat oil over medium heat. Saute onion & garlic in oil 3 mins. Add broth, lentils, carrots, ham, bayleaf, salt & pepper.

2Bring pot to boiling over med-high heat. Reduce heat to low.

3simmer 45 min, or until lentils are tender. Remove bayleaf before serving.
