Ingredients For healthy lentil soup

  • 2 Tbsp
    olive oil
  • 1
    onion, chopped
  • 3 tsp
    minced garlic
  • 8-1/2 c
    chicken broth
  • 1
    12 oz pkg dried lentils, rinsed, drained
  • 1 c
    chopped smoked ham, from the deli, or left-over ham.
  • 3
    carrots, finely chopped
  • 1
    bayleaf
  • 1 tsp
    salt
  • 3/4 tsp
    pepper

How To Make healthy lentil soup

  • 1
    In lg pot, heaat oil over medium heat. Saute onion & garlic in oil 3 mins. Add broth, lentils, carrots, ham, bayleaf, salt & pepper.

    Bring pot to boiling over med-high heat. Reduce heat to low.

    simmer 45 min, or until lentils are tender. Remove bayleaf before serving.
