olive oil

onion, chopped
3 tsp
minced garlic
8-1/2 c
chicken broth

12 oz pkg dried lentils, rinsed, drained
1 c
chopped smoked ham, from the deli, or left-over ham.

carrots, finely chopped
1
bayleaf
1 tsp
salt
3/4 tsp
pepper

How to Make Healthy lentil soup

Step-by-Step

  • 1In lg pot, heaat oil over medium heat. Saute onion & garlic in oil 3 mins. Add broth, lentils, carrots, ham, bayleaf, salt & pepper.
  • 2Bring pot to boiling over med-high heat. Reduce heat to low.
  • 3simmer 45 min, or until lentils are tender. Remove bayleaf before serving.
