Ingredients
- 2 tablespoons olive oil
- 1 - onion, chopped
- 3 teaspoons minced garlic
- 8-1/2 cups chicken broth
- 1 - 12 oz pkg dried lentils, rinsed, drained
- 1 cup chopped smoked ham, from the deli, or left-over ham.
- 3 - carrots, finely chopped
- 1 - bayleaf
- 1 teaspoon salt
- 3/4 teaspoon pepper
How To Make healthy lentil soup

Step 1In lg pot, heaat oil over medium heat. Saute onion & garlic in oil 3 mins. Add broth, lentils, carrots, ham, bayleaf, salt & pepper.

Step 2Bring pot to boiling over med-high heat. Reduce heat to low.

Step 3simmer 45 min, or until lentils are tender. Remove bayleaf before serving.
