Ingredients
- 4 cups vegetable broth
- 2 teaspoons olive oil
- 3 - chopped carrots
- 1/4 teaspoon ground ginger
- 1 - chopped onion
- 1/4 teaspoon garlic powder
- 1 1/2 teaspoons curry powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup lentils, dry
- 1 can crushed tomatoes, 28 oz
How To Make ginger lentil soup

Step 1Saute vegetables and spices in oil for a couple of minutes, until vegetable start to get tender and spices are aromatic.

Step 2Stir in broth and lentils. Bring to boil. Reduce and simmer 30 minutes or until lentils are tender.

Step 3Stir in tomatoes. Cover and simmer 5 minutes or until heated through.
