This fast, easy, and hearty black bean soup is a delicious dinner option on a long day. The ingredients are common kitchen staples and can be pulled from the pantry. Salsa and chili powder add a nice kick to the soup. Mild salsa can be used to cut back on the heat a bit.

Ingredients

  • 2 cans black beans, undrained (15 oz each)
  • 1/2 cup chunky salsa
  • 1 tablespoon chili powder
  • 1 can chicken broth (16 oz)
  • - shredded sharp cheddar cheese
  • - low-fat sour cream
  • - minced green onions
  • - chopped cilantro

How To Make fast and easy hearty black bean soup

  • Add undrained black beans to a pot.
    Step 1
    Place beans, undrained, in a medium saucepan.
  • Partially mash the beans.

    Partially mash beans with a potato masher.
  • Stir in broth, salsa, and chili powder.

    Place over high heat. Stir in salsa, chili powder, and broth.
  • Bring to a boil.
