This is a really tasty and quick soup to make - a good choice for after a long day at the office. I used mild salsa but it still packed quite a nice punch. The Test Kitchen

Ingredients

  • 2(15 oz) can(s)
    black beans, undrained
  • 1/2 c
    chunky salsa
  • 1 Tbsp
    chili powder
  • 1(16 oz) can(s)
    chicken broth
  • ·
    shredded sharp cheddar cheese
  • ·
    low-fat sour cream
  • ·
    minced green onions
  • ·
    chopped cilantro

How to Make Fast & Easy Hearty Black Bean Soup

Step-by-Step

  1. Place beans and liquid in a medium saucepan.
  2. Partially mash beans with a potato masher.
  3. Place over high heat;stir in salsa, chili powder and broth.
  4. Bring to boil.
  5. Ladle soup into bowls.
  6. Top with cheese, sour cream, onions and cilantro to taste.
  7. Serve with tortilla chips and margaritas.
