elaine's spicy black bean soup

This recipe is a delicious, quick, easy, and economical way to get more protein and vegetables into your diet. I have used Better Than Bouillon paste but you could substitute chicken or vegetable broth to replace the water in the recipe. A garnish of sour cream or yogurt reduces the heat from spices. The Original Rotel is not very spicy. You can make a spicier one if that is to your taste.

Ingredients For elaine's spicy black bean soup

  • 1/2 c
    chopped onion
  • 1
    chopped carrot
  • 2 tsp
    olive oil
  • 1 can
    rotel original stewed tomatoes
  • 2 can
    water
  • 1 Tbsp
    better than bouillon chicken paste (or vegetable paste for vegetarians)
  • 1 c
    drained black beans
  • 1/2 tsp
    ground cumin
  • 1/2 tsp
    garlic powder
  • to taste
    salt and pepper
  • 1 rounded Tbsp
    sour cream or plain greek yogourt (optional)

How To Make elaine's spicy black bean soup

  • 1
    Soften onions and carrot in the olive oil.

    Add the Rotel tomatoes and two cans of water and bring to a boil.
  • 3
    Add remaining ingredients except for black beans and simmer for 10 minutes.

    Add drained black beans and bring back to a simmer. Simmer 10 minutes. Taste for seasoning and add salt and pepper to taste.

    Add more water or stock if you prefer a thinner soup.

    Garnish with a spoonful of sour cream for a creamier texture.
