elaine's spicy black bean soup
This recipe is a delicious, quick, easy, and economical way to get more protein and vegetables into your diet. I have used Better Than Bouillon paste but you could substitute chicken or vegetable broth to replace the water in the recipe. A garnish of sour cream or yogurt reduces the heat from spices. The Original Rotel is not very spicy. You can make a spicier one if that is to your taste.

Ingredients
- 1/2 cup chopped onion
- 1 chopped carrot
- 2 teaspoons olive oil
- 1 can rotel original stewed tomatoes
- 2 cans water
- 1 tablespoon better than bouillon chicken paste (or vegetable paste for vegetarians)
- 1 cup drained black beans
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- to taste salt and pepper
- 1 rounded tablespoon sour cream or plain greek yogourt (optional)
How To Make elaine's spicy black bean soup

Step 1Soften onions and carrot in the olive oil.

Step 2Add the Rotel tomatoes and two cans of water and bring to a boil.

Step 3Add remaining ingredients except for black beans and simmer for 10 minutes.

Step 4Add drained black beans and bring back to a simmer. Simmer 10 minutes. Taste for seasoning and add salt and pepper to taste.

Step 5Add more water or stock if you prefer a thinner soup.

Step 6Garnish with a spoonful of sour cream for a creamier texture.
