My husband grew up in NC and his Mama fixed these beans the old fashion way. He loved them. When we got married I had never fixed them before, so I came up with a sure fire successful recipe, and he loves them as much as his Mama's. We make these the entire meal with cornbread. We crumble a slice of cornbread in our beans and enjoy. Yum, yum.
1Wash beans in a colander. Pick out any bad beans.
2Pour washed beans to crockpot. Add water, bouillon, onion and ham (if desired). Cover and cook on medium.
3I put my beans on in the morning and let them cook until the following evening. I know that's more than 24 hours, but the longer you cook them, the thicker the soup becomes and that's how you want them. Add a slice of cornbread and enjoy!
