This is a great, easy recipe for black bean soup. I have always loved black bean soup and have finally perfected my own version! You can add extra ingredients to your liking! Enjoy!

Ingredients

  • 1 can(s)
    black beans (15 oz), drained
  • 1 can(s)
    corn, drained
  • 2/3 jar(s)
    hot salsa
  • 1 can(s)
    green chiles, chopped (small can)
  • 1 can(s)
    black beans (29 oz)
  • 2 c
    chicken broth
  • 3 clove
    garlic
  • ·
    olive oil
  • ·
    cumin
  • ·
    red pepper flakes, optional

How to Make Black Bean Soup

Step-by-Step

  1. In a large pot, saute garlic in olive oil. While garlic is cooking, puree half of the 29 oz can of black beans. (Do not drain this can.)
  2. Add chicken broth to the pot of garlic then stir in the pureed black beans.
  3. Add all remaining ingredients and stir well to combine. Bring soup to a low boil and then simmer for 20 minutes or so until you reach desired consistency.
  4. Top with cheese and serve with corn bread or tortilla chips. Enjoy!
