black bean soup

kMy sister- in-law in South Carolina served this soup when we visited. It is quick, easy and delicious.

Ingredients

  • 1 - medium onion, chopped
  • 2 tablespoons oil
  • 6-7 cans black beans, undrained
  • 1 1/2 cups chicken or vegetable broth
  • 2 1/2 cups mild or medium thick & chunky salsa
  • - garlic powder to taste
  • - sour cream
  • 1 small green pepper (optional) chopped

How To Make black bean soup

  • Step 1
    In large pot, over medium heat, cook onion and green pepper in oil until tender. Remove from heat. In blender, purée 2 cans beans and liquid in batches with broth. Add to pot
  • Step 2
    Drain the remaining cans of beans and add beans to pot. Stir in salsa and garlic powder. Heat mixture to boil. Reduce heat to low and simmer 30 minutes.
  • Step 3
    When serving, add a dollop of sour cream. We also like to add some shredded cheddar cheese.
