medium onion, chopped

black beans, undrained
1 1/2 c
chicken or vegetable broth
2 1/2 c
mild or medium thick & chunky salsa
garlic powder to taste
sour cream
1 small
green pepper (optional) chopped

How to Make Black Bean Soup


  • 1In large pot, over medium heat, cook onion and green pepper in oil until tender. Remove from heat. In blender, purée 2 cans beans and liquid in batches with broth. Add to pot
  • 2Drain the remaining cans of beans and add beans to pot. Stir in salsa and garlic powder. Heat mixture to boil. Reduce heat to low and simmer 30 minutes.
  • 3When serving, add a dollop of sour cream. We also like to add some shredded cheddar cheese.
