Ingredients
- 1 - medium onion, chopped
- 2 tablespoons oil
- 6-7 cans black beans, undrained
- 1 1/2 cups chicken or vegetable broth
- 2 1/2 cups mild or medium thick & chunky salsa
- - garlic powder to taste
- - sour cream
- 1 small green pepper (optional) chopped
How To Make black bean soup

Step 1In large pot, over medium heat, cook onion and green pepper in oil until tender. Remove from heat. In blender, purée 2 cans beans and liquid in batches with broth. Add to pot

Step 2Drain the remaining cans of beans and add beans to pot. Stir in salsa and garlic powder. Heat mixture to boil. Reduce heat to low and simmer 30 minutes.

Step 3When serving, add a dollop of sour cream. We also like to add some shredded cheddar cheese.
