I got this recipe from a WW meeting but haven't actually tried it yet but thought it sounded really good. It is 5 Points Plus per serving.

Ingredients

  • 1 medium onion
  • 29 ounces chicken broth, non-fat
  • 1 can black beans, canned
  • 11 ounces mexican style corn
  • 7 1/4 ounces tomatoes and chiles
  • 8 ounces salsa, tomato-based
  • 1/2 cup white rice

How To Make black bean soup

  • Step 1
    Cook onion in chicken broth until tender, approx 15 mins. Drain beans and corn and add all ingredients. Simmer 45 minutes or until rice is tender
