My husband replied with "Comfort Food" when I asked him what he wanted for supper. Great idea on a cold, rainy and chilly night! I looked at a bunch of recipes and remembered what i had in the refrigerator. I had a taste for bean soup so I looked up Senate Bean Soup. Since the Hubs is into history, I figured he would enjoy hearing about it's history. All the recipes sounded so boring! Of course I made up my own and it was SO delicious I had to write it up! For all of you, and so I could make it the same way again--maybe. Please try this soup when you need a comforting meal.

Ingredients

  • 2-3 cups left over ham
  • 1 cup beef left over from making stock (opt)
  • 1/2 pound kielbasa (opt)
  • 1 quart canned navy beans
  • 4 - carrots, chopped
  • 1 cup celery, chopped
  • 1/2 pound mushrooms, chopped
  • 1 - pepper, any color, chopped
  • 1 - onion, red, chopped
  • 5 cloves garlic, chopped
  • 1 quart water
  • ~3/4 cup instant mashed potatoes

How To Make best bean soup

  • Veggies sauteing in olive oil
    Step 1
    Saute veggies and garlic in a soup pot or if you have a multi pot go for it! I used bacon flavored olive oil for this step. Saute about 10 minutes until veggies are starting to soften.
  • Ready to cook!
    Step 2
    Add the rest of the ingredients and cook on high in your slow cooker for 2 hours.
  • These are the potatoes I added after cooking about an hour

    After an hour I added the mashed potatoes. This is the "secret" ingredient in the Senate soup...but not in the House of Representatives' version.
  • I like some Gluten Free pretzels on my soup!
    Step 4
    We garnished with Cilantro, Tomato, Green onion and a drizzle of olive oil.
